Cooking on a dime has been something I have done in the past while raising 8 children. Sadly, I have shifted away from that kind of necessity, but the Coronavirus has forced me back into my penny pinching ways. I taught my daughter how to make vegetable soup tonight with our leftover roast.
Pro tip: I usually make this while I am cleaning up from supper, so I don’t put away a lot of leftovers. I have one BIG pot of vegetable soup to store and that’s it!
Here’s my recipe on taking leftover beef roast and turning it into vegetable soup.
Ingrediants:
Leftover roast
Leftover potatoes
Leftover carrots
Leftover beef broth
1 can corn
1 can greenbeans
1 can peas
1 c. chopped celery
1 large can of tomoatoe juice
1 can of beef broth (only if needed)
1 1/2 t. salt
1/4 t pepper
How to Make It
Step one:
Take out your dutch oven! (or the biggest cooking pot you have)
Step two:
Get out the cutting board and chop the leftover beef into bite sized pieces. Chop the potoates and carrots the same way. While your chopping grab the celery and cut those up. Dump everything into the dutch oven. Next, take the leftover beef broth and pour it over those ingrediants.
Step Two:
Open up peas, green beans, corn and tomatoes juice and then pour them into the dutch oven. Add in the salt and pepper. The only thing that should need softened up are the celery pieces.
Step Three:
Put dutch oven onto the stove and cook at medium heat for 35-45 minutes. The only thing that should need softened up are the celery pieces, so simmer the last 5-10 minutes. Stir in the canned beef broth if needed at this time. (You might ask, “How do you know you need it?” You only need to add it if you don’t like the consistency. If you feel it is to thick and chunky add it.)
Step Four:
Since this was made from leftovers the flavor will vary each time. Take a taste and determine if it needs more salt or pepper and then season it. (I use a lot of salt!)
